The extract of mandarin has the distinctive feature of having a sweet, fragrant, delicate, and less acidic flavor than that of most citrus fruits. Its smell has some green, zesty, bitter, slightly earthy, resinous, and watery notes and its taste has some sharp notes.

In cooking, it is used to accentuate a note of mandarin in a sorbet, a bavarois, a coulis, a cream dessert, a fruit mousse. To perfume a liqueur, a pudding to associate with orange or grapefruit in dishes (duck) and desserts, with mint and pepper.
