Saint Félicien was initially made with goat's milk, but today it is more popularly made with cow's milk. It is prepared with soft curd having a barn-like taste having an interesting and enjoyable addition to the family of bloomy rind cheeses.
Saint Félicien is a famous French cheese from the Dauphiné region, said to be the close cousin of the Dauphin cheese Saint-Marcellin. The name derives from the place where the cheese was born in the early 20th century. The recipe of this cheese is greatly inspired by that of the Saint Marcellin, however, these are chunkier, creamier, and milder in taste.
Saint Félicien is a cheese that is commonly eaten at the end of a meal. It can equally be used to make hot dishes.
