Montasio Stravecchio is a PDO hard cheese made in the Friuli region and in other specific areas of northern Veneto. The colour of the rind is straw yellow while the paste is light straw yellow. An amazing texture is soluble and creamy in the mouth, becoming harder as it matures.
Montasio Stravecchio has a sweet flavour (decreasing over the months), tasty, slightly acidic, somewhat spicy when the cheese is very matured. The taste is long, full in the mouth, with lactic and vegetal notes for the young "Montasio" and then passes to more lively tones with accents of dried and cooked fruits as soon as the cheese is more mature.
