Vercelli’s veal comes from a young beef cattle, they are at their best when aged between seven and eight months with an average weight of 270 kg. The rack veal is the scotch fillet with the rib bones attached.
It is very flavoured and thanks to the seam of fat marbling, it enhances the taste and texture. The colour of the flesh is fairly pink and it’s a high-quality meat, very tender with a strong flavour.
The veals from Vercelli are guaranteed to be born, reared and prepared in Italy, exclusively fed with vegan flours which gives a taste of grass and cereals.
