Plates are flatfish that hide on the sandy seabed and are characterized by smooth gray or brown skin with red spots. Their taste is delicate and distinctive.

A delicate texture and very gentle handling is required when cooking the cheese. When made correctly, the consistency of the meat is almost creamy and worth the extra effort.

The meat of the filet is lean and cooks faster than other flatfish. Wet cooking methods, such as brining, boiling, or breading - or leaving the skin on while cooking - can prevent this.
